Why Acids and Bases React Differently and How They Form Salts

Hi! Today in my science lab, I was doing some experiments with acids and bases. I mixed lemon juice with baking soda, and it started to fizz a lot. Then I tried mixing vinegar with soap water, and it didn’t fizz much at all. I got a little confused. Why do some acids react strongly with certain substances and make fizz, while others react very little? Also, what kind of salt is formed in these reactions?
